Very Berry Frozen Delight Recipe

With the weather warming up, ice cream makes an attractive treat. We all know it is not the healthiest of foods - high in sugar, fat and other additives. If you are thinking frozen yogurt is a healthier alternative, you may be surprised to find it often contains more sugar than ice cream. For a healthier option that’s still going to hit the spot, try this fast and simple recipe for a Very Berry Frozen Delight.

This recipe is packed full of antioxidant-rich berries, high in fibre and vitamin C. Commercial freezing techniques result in frozen berries retaining a high level of nutrients. Choose organic berries where possible to avoid pesticide residue, common on conventional berries. You can use any type of berry - I've gone with a mixed pack including raspberries, blackberries, blueberries, and strawberries. If you desire your treat a little sweeter add some stevia, a naturally sweet-tasting herb containing no sugar.

Very Berry Frozen Delight

Serves 1 - 2

1 cup of mixed frozen organic berries
2 tablespoons of thick organic plain yoghurt
1/2 teaspoon of stevia (optional)

Put frozen berries into a food processor. Add yoghurt and stevia (optional). Process on high setting until just combined. You may need to give the mix a quick stir and process a second time. It is important not to over-process as it will cause the mixture to melt. Serve into one or two small bowls and garnish with a few frozen berries.

The key to this recipe is to work fast as it tends to melt quicker than ice cream. Prepare it immediately prior to serving.  You should end up with a semi-frozen mixture that has a consistency similar to soft serve.
